Walnut oil is an edible oil often used for food preparation purposes. It has a low smoke point, so it is not a good candidate for frying food. However, it is quite suitable for salad dressings or for baking. Oxidation of walnut oil can produce undesirable flavors. The oxidation stability of walnut oil is easily determined by using the Rancimat method, as demonstrated in this Application Note.
