Hops is arguably one of the most important ingredients in beer as the alpha acids provide a bitterness to complement the sweetness of the malt as well as essential oils which contribute to the flavour and aroma.  Hops are typically added at several stages of the brewing process according to the desired characteristics of the final product. 

Microwave-assisted extraction has recently been used to extract the essential oils directly from hops which provides a product that can be used directly to flavour fermented beer.  The remaining hops product after the extraction typically exhibits a higher content of iso-alpha acids and thereby provides a higher level of bittering during the boil.  This process offers several advantages including a reduction in the amount of hops required to achieve the same bitterness, a subsequent increase in the yield of a brew as well as providing essential oils to create new flavour combinations. 

This webinar will introduce the Milestone ETHOS X 2.0 and ETHOS XL for solvent-free extractions and provide some data from hops extractions in terms of yields of essential oils as well as isomerisation of alpha acids.
